What I Eat - Another Weekday

Hi everyone,

I hope you have had a good week so far. I decided to track my food today so I have another weekday "What I Eat" post for you.

I fancied something hot for breakfast (and I'm often starving after waking up!) so I made myself a big bowl of porridge. I don't do anything fancy to make my porridge, just take around 40g of porridge oats in a bowl, cover them with almond milk and then microwave for two to three minutes. I then add some chia seeds and whatever fruit toppings I have available. Today I opted for a small banana, cinnamon and heaped teaspoon of almond butter which gives such a creamy, nutty flavour.

Lunch today was the same as usual. These are the Clearspring Wholemeal Organic rice cakes topped with ham, rocket and cucumber.

My afternoon snack was a pear and a kiwi.

My dinner was salmon and stir fry noodles. These are wholewheat noodles and I added half an onion, half a pepper, garlic, ginger and a little soy sauce. I also added a little sweet chilli sauce to the top of the salmon. Not the healthiest but very tasty!

I had a slightly naughty end to the day with a mint hot chocolate and some home made marshmallows. Not the whole plate, I promise, just a few on top of the hot chocolate ;-). There is just something completely irresistible about the combination of melted marshmallow and chocolate!
